Italian Style Moose Bologna Recipe

Sausage, salami, and bologna are all excellent ways to process a lot of the meat of moose, caribou, or deer which often ends up as stew meat or hamburger. This recipe is very simple and can be used as sandwich fixin's as well as snacks with crackers and cheese.
  • Put meat and suet through grinder with coarse blade.

  • Sprinkle spices on meat. Mix by hand for 15 minutes. A small amount of water in the meat helps to keep it from sticking to hands.

  • Pack the meat into a pan and chill overnight before grinding again with fine blade.

  • Stuff the mixture into casings and boil them in water until they float.

  • The sausage may be frozen or refrigerated for use as is or may be smoked, using a cold smoke for 3 to 5 days.
