Stir-Fry Almond Duck

I have made this with chicken, it is awesome with either one. Also, I have used other vegetables besides the pea pods - broccoli, peas, carrots - they all work fine.
  • Slice duck into thin strips.
  • In a small bowl mix ginger, honey and cornstarch, blend in water, soy sauce, and sherry.
  • If frozen, thaw pea pods.
  • In wok, or large skillet, heat oil over medium heat.
  • Add almonds, stirring and cooking for about 3 minutes.
  • Add duck and cook until barely done.
  • Add mixture in bowl and cook until sauce thickens.
  • Add pea pods and stir fry until hot and glazed.
  • Serve with rice.
