Upland Bird Mushroom Casserole

This dish is a great bachelor's recipe because it is super easy to fix and can be made with any upland game bird you have.

  • Allow about 1 lb of bird per person.

  • Cut cleaned birds into serving size pieces.

  • Lightly coat pieces in flour seasoned with salt and pepper and brown in some oil.

  • Place in a casserole dish.

  • Pour 1 or 2 cans of undiluted cream of mushroom soup over top.

  • Cover and bake for 2 to 3 hours at 350 degrees or until tender, depending on age of birds.
