Ptarmigan Rice Paella

Use either spruce hens, ptarmigan, or grouse allowing 1 per person. After skinning and quartering birds, shake in seasoned flour and fry in bacon fat until tender. Arrange meat around rice on a serving platter. Follow recipe for making the rice dish below.
  • Heat butter in heavy skillet, add garlic and rice and cook, stirring constantly until rice turns golden.

  • Add broth and remaining ingredients and heat to boiling.

  • Stir to separate frozen vegetables.

  • Cover, reduce heat and cook until rice is done and all liquid is absorbed, about 20 min.
