Tip #24 Two Sides To Drying Salmon Roe Sent in by: Ssgt. Tony Softa from Elmendorf Air Force Base. After you have completed the cure for your roe, I've found that the best method to use in the drying process when curing salmon eggs is to take an empty cardboard box, stretch a cheap game bag over it and cinch it with a rubber band or tie a knot in the excess. You can even get creative and cut holes in the sides of the box so the air will circulate through. Then you don't even need to turn the eggs! Size of the box depends on how large the game bag is. Be sure to stretch the bag tight so that it doesn't sag when you lay out all the eggs.
